Google's Business Profile help says it can take up to 24 to 48 hours for photos and videos to show on a profile. If a restaurant wants a clip live for Friday night, upload it by Wednesday, not Friday afternoon.

A build plan with Omni and Timeline

A timing plan

- Day 0: the clip must be live. Allow up to 48 hours before it.
- Day minus 3: upload the final file.
- Day minus 4: finish review of the generated clips against your own photos.
- Day minus 5: submit the Omni jobs, with time for a retry.
Check before you upload
Look at the file size of what you download. Sume does not report it against the 75 MB limit, and a 30-second clip at higher resolution is the likeliest to cross it. Length is the other check: 30 seconds is a hard ceiling, so keep Timeline's audio.duration_seconds at 30 or below.
The Photo standard row is about photos. For a clip, apply the same test: does it represent the room, the food and the staff as they are? A generated dining room that does not exist is the opposite of that. Use your own photos as first frames.
